Happy Mothers Day.

My daughter is providing a Mother’s tea and pumpkin pie isn’t traditional but we wanted to include some desserts for gluten sensitive family members with very limited taste in pie.

The crust is from the King Arthur flour website:http://www.kingarthurflour.com/recipes/gluten-free-pie-crust-recipe.

The pie filling is just from the LIbby pumpkin can.

To make rolling easier, I dusted generously with tapioca flour.

It was pretty much indistinguishable from my regular homemade crust:wet on the bottom and flaky on the sides.
